These simple and healthy no-bake EVOO Energy Bites are so good. It is packed with fiber, mineral, and naturally sweetened. Make these energy balls for tasty after-gym snacks or guilt-free breakfast.
EVOO Energy Bites
- 2 tbsp cacao nibs
- 50g rolled oats
- 2 tbsp flax seeds
- 100g pitted Medjool dates
- 2 tbsp extra virgin olive oil
- toasted sesame seeds
- chopped pumpkin seeds
- Put cacao nibs, oats, flax seeds and turmeric powder in a food processor. Pulse a few times until they are in small pieces.
- Add Medjool dates and pulse few more times until well-mixed. Mix in 2 tbsp of extra virgin olive oil, stir to combine.
- Scoop mixture and roll into balls. Roll the balls in toasted sesame seeds or chopped pumpkin seeds. Put in the refrigerator until solid.
